Ingredients

1 can chickpeas, drained and rinsed

1/4 cup tahini

2 tbsp fresh lemon juice

1 garlic clove

2 tbsp olive oil

3 tbsp cold water

Salt to taste

1 tsp ground sumac

Optional toppings: chopped parsley, sesame seeds, crushed roasted chickpeas, crumbled feta


Instructions

1. Boil chickpeas with baking soda for 10 minutes to soften, then peel.

2. Blend chickpeas, tahini, lemon juice, garlic, olive oil, and cold water until smooth.

3. Season with salt to taste. Add more water if needed for creamy consistency.

4. Spread hummus into a bowl or platter, swirling with the back of a spoon.

5. Drizzle with olive oil and sprinkle ground sumac generously over top.

6. Add optional toppings like parsley, sesame, chickpeas, or feta.

7. Arrange pita, veggies, olives, and dips around the hummus and serve.

Notes

Use cold water while blending for ultra-smooth hummus.
